Klatter har jeg godt nok spist mange gange. Det er hjemligt og hyggeligt, og dufter fantastisk. Et skoleeksempel på at gøre noget lidt hverdagsagtigt og billigt (den sunde grød) meget mere festligt og tillokkende. De fleste små børn vil elske dig, hvis du laver klatkager. Dog ikke min far på 76, som vist nok fik lidt for mange klatkager i sin barndom. Til gengæld gafler han æbleskiver og pandekager i sig – og mener åbenbart, at der er kæmpeforskel. Det er der ikke.
Min farmor, hvis opskrift det er, anbefaler at man rører klatterne med “farsrøreren” – det
er faktisk et køkkenredskab, der stadig findes!

(havre-, byg- eller risengrød) – ca. en dyb tallerkenfuld
2-3 spsk mel
2-3 hele æg
1 spsk sukker
1 spsk kanel

Sådan laver du Klatter
Rør grøden op med æggene, ét ad gangen.
Rør melet, sukker og kanel i, og en smule salt, og bland omhyggeligt.
Sæt små klatter af dejen med en ske på en varm pande med rigeligt smør eller margarine. Vend, når de er faste og har lysebrun skorpe på stegesiden.
Spises varme eller kolde med sukker og syltetøj.
